Hi,
Does anyone know of a really quick and easy Christmas cake recipe? Probaby isn't such a thing but I thought I'd ask anyway.

Hi dkcrooby, I have a recipe for a xmas cake which i have made once. It is not the recipe i do for my celebration cakes though. Anyway here goes. You will need 12oz plain flour, 1tsp mixed spice, 4oz ground almonds, 4 medium eggs, 1/4 pint milk or 1/2 milk 1/2 brandy, 8oz butter, 8oz caster suger, 8oz currants, 8oz sultanas, 8oz raisins, 4oz glace cherries, and 4oz mixed peel. Oven temp is 150C,300F,Gas mark 2. The tin size for this recipe is 9inch round or 8inch square. Hope this helps. Julie
