its still in freezer just looking for an excuse now to have family round and defrost it..... lol

Hi everyone end of saga here we are 10 months later and decided to get mini cake out of freezer for hubbys birthday.as he has a red mini.I unwrapped it on the bench and defrosted it uncovered and the icing went very shiney and a bit gooey but i left it overnight and by the morning it had all dried out and hardened up and it did not discolour (and remember it was black icing so i would have thought the worst colour to discolour) and it looked and tasted as good as the day i put it in so success it worked ha ha

That's great. And very useful to know, all the info I have found says that sugarpasted cakes will be ruined if frozen. I imagine one wouldn't want to risk it with a wedding cake but sounds like it could be OK for family or one that would be further decorated anyway. I was, by the way, searching books/internet for info about freezing sugarpaste on its own (had excess blocks) and there was absolutely nothing. So I tried it and it was fine (defrosted at room temp for a day before kneading and using).
