Hi, do anyone have a good tried and tested recipie for plain biscuits /cookies that are suitable for being iced. they have to be flat, not humpy if you know what i mean........ thankyou

No problem rach i have had stress with my flower leaf cutters, lol so have not got round to cookies yet....... i broke 4 leaves so had to do more.

okay shortbread Biscuits makes about 12 6 oz plain flour (175g) 4 oz butter (110g) 2 oz caster sugar (50g)
Preheat oven to gas mark 2 , 300 F, 150 C A baking Sheet lightly greased
Begin by fortst beating the butter with a wooden spoon to a soft consistency..or bung in the blender. then add sugar then the flour..bring the mixture together with you blender or spoon then your hands. Put onto a lightly dusted board..dusted with caste sugar...then quickly and lightly roll out and cut..to about 3 mm depth....Use a 3 inch cutter or whatever you want.... Arrange then on the baking sheet and bake on a highish shelf for about 30 mins or less.. Cool the biscuits on a wire rack and dust with some caster sugar.. Store in an airtight tim to keep them crisp.
