Hi, i had a bit of a sticky end with some butter icing i made and wondered what you all use. bought some butter from the supermarket ....there own make...the butter icing result was hard, terrible to spread, a paler colour and looked like wax not nice and fluffy....... almost ruined my cake but lesson learnt. i just wondered what you all use butter or utterly butterly etc.

Chrissy I use the stork one or the flora light is good to use too. You need unsalted butter, something that is light.

Okay Chrissy....it sounds like you are not mixing your icing enough.....
You need this recipe ..again I use it for all my cakes
4 oz unslated butter softened 12 oz icing sugar 1 tablespoon milk 1 teaspoon vanilla essence
really easy to do...put it all in a blender/mixer start on a slow speed to incorporate all the icing sugar..then bring the speed up to quite a high speed and mix for 5 mins..
It will go very light almost white, soft and fluffy.....beautiful

Thankyou i will try the flora as that has a nice taste, also try rach's recipie........ i did put lemon juice in this time first time i used it, not sure what difference it makes...... following the beginners sugar craft book 1.

lemon juice justs makes it lemony and takes the sweetness down very slightly...if you want to sell cakes and you say its filled with buttercream then you must use butter otherwise you can get caught out witht he description.... I use the recipe all the time and its lovely you can add lemon to make it lemony and chocolate etc..you cnt go wrong..and you get a beautiful light vanilla buttery falvour..FAB

Thankyou i was not sure if the lemon had somehow made it different apart from the flavouring, no i don,t sell cakes just make them for fun to eat, lol. i will try your recipie this weekend as i have 2 cakes to do for family visiting. i have always used 4 oz to 4 oz before but will let you know the tasting decision...... thanks again
