Portions and costings?

Hi everyone.

I'm sure I read on here a little while ago someone asking about costings and portions , I have looked but can not find it.

I am lucky enough to have "making cakes for money" in front of me" Its a really handy book for people making cakes as part of a business rather than hobby.

If anyone has any questions about this please feel free to ask and I shall see what help this book can give us.

Usually, sponge cakes are cut into slices approximately 1 x 2 inches. Cakes made using other shapes (ovals, hearts, hexagons and so on) will yield similar numbers of portions for similar sizes.
