Hi everyone. I'm sure I read on here a little while ago someone asking about costings and portions , I have looked but can not find it. I am lucky enough to have "making cakes for money" in front of me" Its a really handy book for people making cakes as part of a business rather than hobby. If anyone has any questions about this please feel free to ask and I shall see what help this book can give us.

SPONGE CAKE Cake size (inches) 5 6 7 8 9 10 11 12 Approximate number of portions (Square) 12 18 24 32 40 50 60 72 Approximate number of portions (Round) 10 14 20 25 33 39 49 56 Usually, sponge cakes are cut into slices approximately 1 x 2 inches. Cakes made using other shapes (ovals, hearts, hexagons and so on) will yield similar numbers of portions for similar sizes. RICH FRUIT CAKE Cake size (inches) 5 6 7 8 9 10 11 12 Approximate number of portions (Square) 27 36 51 64 84 100 125 144 Approximate number of portions (Round) 21 28 40 50 66 78 98 113 Usually, rich fruit cakes are cut into slices approximately 1 x 1 inches. Cakes made using other shapes (ovals, hearts, hexagons and so on) will yield similar numbers of portions for similar sizes.
