Right I made 400 odd muffin size sponge cakes for the school...so I was bulk baking ..icing then putting them into stacked trays with airspace etc then wrapped up in cling film... Now This has never happened to me before so nor sure of the reason..wondered you any of you knew why.. When I umpacked the cakes now air could still getr in and out of the stacked trays...some of the cake cases had come away from the cake the cake still is perfect but it just dosnt look as nice with the case coming away fromt he cake..Do any of you know why this has happened.. It wasnt on all of the cakes just on some but I wasnt very happy...kids still loved em ...but u know me...

Sorry Rach, I haven't a clue. Are they not meant to be in an airtight container?

they can be but when I am transporting 400 odd I use these stacking trays but I have never had this problem before when I have used em......seems very strange.....just wish I knew why....

You weren't using a different make of paper case from normal were you?

Nope the same as I always do..........the only thing I can think of was the cakes may have still been abit warm..but would that cos that problem

If they weren't properly cooled that may have caused it - can't think of anything else, but I would have though that would have affected the icing as well?
