i have just made my frist friut cake using a frined recipe you is teaching me sugar flowers. its a recipe she uses for the wedding cakes, i think i may have cooked it too much as the surface is very crumbly and brunt almost, have i dione anything wrong or should i simply cut the crust off. alos i forgot the alchol in the recipe but plan to feed it with brandy is this ok,

Hi Dizzy - Im not a lover of fruit cake to be honest but are both of your ovens the same?
I know excatly how long I have to bake a cake in my own oven - yet I went and did a bit of baking the other week at my mums and the cakes turned out more like crisps!!
I hadn't thyought but im electric and she uses gas.
Could this be the reason?

Hi Dizzy - what a shame. how burnt is the top.? you could cut of the top and see how it is underneath. sometimes you only have to take off the very top layer. also it will not matter if you are going to marzipan and ice it. don't worry I'm sure it will turn out ok. Did you put any brown paper on the top of it an hour or so before it was finished.? that should have stopped it burning too much. I alwas soak my fruit in brandy for a few days before I cook it,in a container so you can turn it over everyday. But you can now feed it brandy, and let it soak in. My oven alwas takes longer to cook things,it is gas.In future about any hour before cooking time is up take the cake out and test it ,then cover it in brown paper and keep checking it every half hour or so. I make three christmas cakes for my family as we love fruit cake. Don't worry it will be lovely I'm sure.

Hi Dizzy....
It sounds like you r cake tin may not have been a really good qualitly thick one..it does make a difference especially with friut cake....also did you protect your tin and cake from the heat.....
If you didnt this could be the problem.....
With a friut cake they need to cook for many hours on a low oven (again oven could have been too hot).....the tin must be double lined ie two layers of greaseproof paper on the base and on the sides of the tin...then the tin must be wrapped in two to three layers of brown paper on the outsuade and tied with string..this must also be put underneath the tin...So in all you have a very well wrapped tin to protect from the direct heat......The top put some greaseproof paper slightly damped with water..put the water siade down again this protects the cake and also helps with keeping it flat..this can be removed towards the end to brown off nicely.....I tend to not do that and just put a couple of layers of greasseproof on the top and then keep checking if it is still getting too browwn cover the top with foil..
I hope that helps abit...Best to do is slice off the top of the cake and check what the sides and base and inside are like ....if you can try and taste a little if it is really burnt the flavour might have gone right through the cake ...so best check..If its okay then pop some brandy through it and wrap with greaseproof paper and then foil and pop away for a while to mature..

wow thanks for all the replys, i now know lots more, it sounds as if i had the oven too high, the instruction were electic and mine oven was gas, also i didnt double wrap the tin or put greaseproff in the inside, and i didnt cover the cake with paper half way though, so did lots wrong by the sounds of it. but its not too brunt really the sides and the bottom are fine the top is lumpy as i didnt flatten it and its a bit crumbly i think i might be able to level it off a bit, but thank you for your replys i will now know for next time.

thanks for all your coments, my cake wasnt as bad as i thought and now has been maripaned, i have this aftenoon made some more friut cakes using a differnet recipe and using all your tips, and they have come out alot better. so thnak you everyone
