I have treated myself to some metal stencils for lettering but have had an awful time to get the letters out. they kept sticking. used some icing sugar and also white flora to stop them sticking but they still did. any tips please. many thanks

Have you tried cornflour?

Agree with the cornflour and very thin flowerpaste or modelling paste. I put my cornflour in a muslin bag and keep it in a polybag between uses. Just dab the cutter onto the bag and you'll get enough to coat it - otherwise, try a light dusting of cornflour over the paste before cutting. Any excess can be brushed off with a very soft paintbrush.

Many thanks for your answers. I used just fondant icing and icing sugar/ will have to buy some flowerpaste.
