Hi, I've been asked to make a fruit cake for a birthday 3 weeks away. Now I know fruit cakes are meant to mature so will it be ok if made only 3 weeks in advance? I'm worried it will be too dry. Any thoughts?

No it will be fine..I make fruit cakes at short notice ie one week and i find they are just abit more crumbly as they havent had time to mature as much (when its cut)......
Obiviously the longer they have the better they will be ...but you will be fine with 3 weeks

I usually do it as once every couple of weeks. ..if i remember...or most of the time I just do it the once or twice...once when still warm and then when cold wrap it up still in its own greaseproof paper then foil..nver wrap directly with foil as the fruit reacts with the foil...and then after a week or so if I remeber I do it again....
