Well i tried the sponge cake recipie in the international book 1 and forgot till the same thing happened again, the cake sunk in the middle, i followed all instructions strictly, or so i thought , so i must be doing something wrong as it happended twice to me, had terrible trouble filling in the big dip, i was not sure it could be the almond essence i used, or that i did use trex to grease the paper , tried butter on other occasions. it did curdle so i added flour, as this takes ages to mix in 4 eggs i wondered if anyone has a trusted sponge recipie as i am not using this again........... even if it is my mixing, lol.

Chrissy try my maderia recipe on here.....it work like a treat bung it all in mix together and bake..simple..really it is.. try it

I've heard that it helps if all the ingredients (eggs, butter etc.) are room temperature before you start mixing...
