you cant go wrong with that recipe........trust me...........if you want chocolate just sub 1oz flour with cocoa powder

i baked the madera receipe today, but added 2tspns of baking powder, cake sunk in middle, was the BP the cause?
Any advise who be appreciated, cheers mandy

probably added too much so the cake just sunk..I dont use any at all....
You really dont need baking powder if you are going to use it just do a tsp any more and the cake will be too light and wont be able to hold...
The comments I get from my cakes are the best I have ever tasted...It is only a very basic recipe but people seem to like it but use your sugar syrup to keep the cake moist ...thats my secret weapon..wouldnt make a cake without it now..
Hope that helps..if anyone has any oither ideas why it sank let us know..
Also I bake at 160 C in a fan oven if yours is not a fan oven may need to increase temp to 180 C

Hi, I have a fan oven so net time will not add BP. I have rec'd the Celebrate with a cake book yesterday, & the cakes are fantastic, will try & make some over the next few months for practise.

I have made the parcel cake out of that book piccys in the cakes section......they all look lovely but are harder than they look..but fun to do..sometimes.....
