Just had my first ever enquiry from my website and it was a woman wanting a croquembouche!!!!! typical someone asking for something i can't do...anyone done any?

hi i saw chef james martin do one on one of the cookery programs just recently saturday kitchen i think. i think it was his sisters wedding cake. i have a link for Delias recipe if it helps www.deliaonline.com/recipes/croquembouche,1079,RC.html i think it has to be done on the day or 1 day before the wedding and also it has to be kept away from high humidity as it can soften the caramel so steamy kitchens are out ( i think ill stick to sugarpaste it seems too much hasstle)

yes, i told the lady that i wouldn't be able to do it...there is no way i could make 300+ choux buns, fill them and stack them on the day of the wedding, far too much stress for me, i have enough panic attacks with standard cakes! I spoke to my tutor about it, her family have a cake decorating business and she says they never do them because they are just too risky.
I saw Delias recipe yesterday, she seems to think it is quite easy, but then she only has about 10 buns in hers!
I was just miffed that the first enquiry generated by the website was for something i couldn't do
