I've seen it advised as anything from 2 days to two weeks! If you don't use milk in it I would say OK for a week, but personally if I add milk rather than water as the extra liquid I use only a newly-opened milk and keep for only 2-3 days. And though buttercream may keep well, you may have to take into account how soon the cake is to be eaten after you make it.

I only use water in mine, so kept in the fridge it should be okay for a couple of weeks (as the sugar in the icing sugar keeps bacteria at bay)...but it might go crusty...I generally only make as much as i need...

Thanks Victoria, already thrown it out but need to make some more anyway, do you know how to make a really small quantity of royal icing? I seem to get the measurements wrong and end up with loads!!! thanks again, Julie

no, unfortunately i always end up making loads of royal icing and throwing it away. if you are using an 8g sachet of egg white, you need about 50mls of water and 320g of icing sugar...you can try making half that quantity if you can split the sachet of egg white powder...i have also read somewhere that you can freeze it, but never tried that.
depending on what you are doing you can get a royal icing sugar at asda which you just add water too, you have to mix it for ages, and i wouldn't use it to cover a cake, but if you are just doing small amounts of writing piping or using it to stick things together, it's not too bad, i haven't tried it for shells or anything like that though and our lecturer says not to use it, but it is easier...

ha ha ha, don't be daft...i'm a relative novice myself....and have to say i have quite missed going to college these past 2 weeks...i did a couple of other christmas cakes for relatives (forgot to photograph them) and they had quite a bit of piping on them...i quite enjoy the piping side of things now, and i got Mich Turner's new book for christmas and there is a lot of piping in her book too, so maybe it is making a comeback...
oh and i did read the other day though that you should only keep buttercream for 1 week in the fridge...suppose its better to be safe than sorry!
