i'm afraid not sorry. just never try and cut them in the chopper! i tried once before because i hate grating and they all sank to the bottom of the cake and well, that was that!

I would love a carrot cake recipe aswell..mt friend made one ..and I asked her for the recipe and she told me which box mix it was...so no good unfortunately..
so i am still looking aswell

I just phoned mum and she says it's not in her collection so it must be here somewhere. I know we had it at Christmas as it's my brothers favourite and she always trys to bake him 1 for when he comes back home.
I shall keep looking.......

its sounds yummy...and I dont really like carrot cake..but the last one i tried was really nice..but unfortunatley that was the packet mix one...

This one has a cup of oil so i'm not sure if you'll want to use it or not: INGREDIENTS FOR CARROT CAKE
2 cups All purpose flour 2 teaspoons baking powder 1 teaspoon baking soda ½ teaspoon salt 2 teaspoons Cinnamon 1 cup Vegetable oil 1 ½ cup sugar 4 eggs 3 cups grated carrots 1 cup walnut, coarsely chopped
Preheat oven to 325 degrees. Oil and line two 9" round cake pans. Sift together flour, baking powder, soda, salt, and cinnamon. take 2/3 of the sugar, add gradually to the oil, beating well after each addition. Beat eggs until light, add remaining sugar. Slowly add egg mixture to oil mixture, continue beating until the mixture is smooth and fluffy. Gradually stir in the sifted dry ingredients until well combined.Add carrots and nuts. Mix well. Pour into prepared pans and bake 60-65 minutes, until cakes are golden brown and the tops spring back when lightly touched. Allow cakes to cool for 20 minutes and turn out to cool. Once cool, spread icing between layers, then ice top and sides. Sprinkle a little orange zesty around top edge.

Thankyou so much for putting the recipe on. Have you ever eaten this one to know what it is like? not sure about the oil.?
