Rach, how far in advance would you say you can make and decorate a cake if it's just a sponge cake , no filling, with fondant on top?

i would be more careful with that if its a light sponge like the one I use a couple of days max......I personally wouldnt use that recipe if there was nothing inside as it could dry out..cos normally I put in sugar syrup and buttercream so keeps everything nice and moist and once covered seals everything in..
I use use a proper madeira cake recipe and then that can be kept whole and covered they say it can hold for about 2 weeks..so one week to cover and decorate and another to eat it......
Hope that helps
Rach x

About 5 years ago now. We lived in NZ for a year and a half and then moved here and have been here about 3 1/2 years. Seems like forever! We went there on holiday 2 1/2 years ago but i'd never go back because of the violence. I actually even dread thinking about going there on holiday.

Hi Alison,
Was just coming back here to say hi to you as i see we're on at the same time! Was going to ask how your nan is.
Sorry, i meant SA, i'd never go back to SA. It's a lot more violent. You have to have burglar guards on windows and doors, never walk alone, have your property fenced etc. Just last week my sister-in-law and husband were hijacked. They took their car, mobiles etc. He was hit on the head with a gun but thankfully they're ok. Usually they don't think twice about killing someone so they're really lucky. Thank goodness their daughter (3 yrs) wasn't with them. And that is my biggest fear even going back for a holiday is that they take the car with the kids strapped in the back. The perpetrators of course believe in witchcraft etc. and also that sleeping with a virgin cures AIDS. It's disgusting and although that's starting to happen a lot here too, it's worse over there. You have to have your doors locked in the car. It's just too scary. It's a beautiful country and it's such a shame it's ended up as it has. I think if you go directly to the tourist destinations it's a wonderful experience. That's what we'll do next time we go. We miss the game parks (going on safari :-)) and the birds. Oh well, at least we're safer here and we've made some lovely friends!
New Zealand was very nice just sooo small and a bit too isolated for me. It does have it's fair share of crime too but not as violent as SA. Australia is where we're headed in about 3 - 4 years time. I think our children should grow up in a similar environment with regard to the weather, being able to swim in the sea, walk around in summer clothes and play outdoors most of the year.
