Your cakes are great, did you have any training before you did the christening cake?

Golf bag was really easy...i just saw a picture on the web and copied it, it was really big though, could have done with a bigger board really.
I hadn't had any training at all before I did the christening cake...I really struggled to find a cake I liked for Phoebe's christening and then saw one with elephants on a website, the shop was quite close to where I live, so I went down and they wanted £165 for a 2 tier sponge cake!!! I was horrified, so came home, played around with my niece's playdoh and decided to have a go and it just went from there really. I am now doing a royal icing course at college, that is a bit more difficult, particularly the coating of a cake, the piping isn't too bad though, but it's really old fashioned looking

I was pleased to use some of my newfound piping skills on the christening cake, so the college course is paying off already...I've also learned how to properly cover a cake in marzipan and sugarpaste...amazingly easy now rather than the trauma i generally have every time i cover a cake!

lovely cakes, I could do with some tips on covering with sugerpaste as i always seem to get creases and no matter how much time i spend smoothing i can never get rid of them! also would be good to know what alpha letters you use as they look great!!!!!

well i've always tended to put the paste on, a little shorter than i need and a little thicker and then just smooth it down with the smoothers, i do get some creases sometimes, but generally its okay, but the way the teacher showed us it you put the paste on a bit shorter than you need and smooth it over the top then sort of pull the sides out all the way round and smooth down the side a cm or so, then pull it out again all the way round, a bit like a skirt, so you don't end up with one or two big fluted bits but lots of smaller fluted bits which are then easier to smooth down...you keep going down the cake like that until you reach the bottom and hey presto no creases whatsoever! Bit hard to describe it without actually showing it done...i also have terrible trouble with the top edge of the cake, it never looks the same all the way round and that is because i've always done it with the smoother, but it looks a lot more rounded and even if you just use the palm of your hand on that bit...probably what you all do already, but being self taught i had no idea!

oh, and the letters are done using some moulds...i have patchwork letter cutters but i can never get them out, these are just some moulds that i got off ebay and i push the paste (either flower paste or modelling paste is easiest) in and flick them out with a pin...they are very small and its really painstaking stuff and i wouldn't even attempt the lowercase letters as they are even smaller! I do find it easier to pipe letters, but i need to do them quite big...
